Maple Banana Bread





Mmmm. Banana bread. I've made a lot of banana bread and this one is my favourite. It came out really moist and I enjoyed the touch of maple syrup.

What you'll need:

2 cup AP Flour
1 tsp baking soda
1/2 tsp cinnamon
3/4 cup brown sugar
1/2 cup salted butter, at room temperature
1 tsp vanilla extract
2 eggs
2-3 bananas, mashed
2 tbsp maple syrup
1/4 cup milk
1/2-1 cup walnuts or raisins (optional)

Preheat the oven to 350 degrees F. Grease a 9 x 5" load pan.

In a small bowl, mix together the flour, baking soda, and cinnamon. Set aside.

In a large bowl, beat brown sugar, butter, and vanilla until the mixture is fluffy. Add the eggs, one at a time, mixing after each addition. Stir in the mashed bananas and maple syrup. Then stir in the flour mixture alternating with the milk. Finally, if you want, you can throw in some walnuts and/or raisins. I really enjoy walnuts in my banana bread!

Pour into your prepared baking pan and bake for ~50-60 minutes. When a toothpick comes out clean, your loaf is done baking! Let cool, then serve with a big slab of butter. YUMMY.
