Dark Chocolate Avocado Cookies with Sea Salt



This is also a "healthy" dessert-like recipe. Lately, I've been a HUGE fan of sea salt, so these cookies were right up my alley. Seriously though, I've been putting sea salt on evvvverything... toast with almond butter, ice cream, brownies... hm. It's gotta be that sweet and salty combo that I love so much! Anyways, these cookies are super simple, extremely moist, and surprisingly quite rich and decadent. And there's only like 70 calories per cookie.

Here's what you'll need:

1 ripe avocado
1 ripe banana
2 Tbsp honey
1 egg
1/2 cup cocoa powder
1/3 cup carob nibs or dark chocolate chips
1/2 tsp baking soda
1 tsp sea salt

Preheat your oven to 350 degrees F and line a baking sheet with parchment paper.

Using a food processor or beaters, mix together the avocado, banana, honey, and egg until well combined. It should look nice and creamy. 

Then add in the cocoa powder, baking soda, and 1/2 tsp sea salt to the wet ingredients, and mix together. Stir in the carob nibs or chocolate chips. 

Place large spoonfuls of cookie batter (~ 2 Tbsp) onto the prepared baking sheet. Flatten cookies with the spoon because they don't spread during baking.

Bake for 8-10 minutes. 

When the cookies are finished baking, sprinkle with the remaining 1/2 tsp of sea salt (or more if you want!) and let cool completely before removing from the baking sheet. The cookies will stick to the baking sheet if they are not cooled completely.
