Sweet Potato and Lentil Burgers



Here's a yummy vegetarian burger recipe adapted from Blissful Basil. You can serve these on a bed of greens drizzled with your favourite sauce or in a bun with all of the fixings.


Here's what you'll need (for 6 patties):

1 large sweet potato, boiled and mashed
1/2 cup red lentils, rinsed
2 cups of water
1/2 rolled oats, divided
1/2 tsp garlic powder
1 Tbsp fresh lemon juice
1/2 Tbsp olive oil
1/2 tsp paprika
1/2 tsp cumin powder
salt and pepper to taste
1/2 cup chopped spinach or other green (e.g., kale, arugula)
1/3 pepita seeds
2 Tbsp hemp seeds
2 Tbsp of cilantro (optional)


Combine the lentils and 2 cups of water in a small saucepan. Bring to a boil, then reduce to simmer for 20-25 minutes until the lentils are tender. If needed, add water to keep the lentils submerged while simmering. After they are finished cooking, drain off excess water.

Preheat your oven to 400 degrees F and line a baking sheet with parchment paper.

Combine the mashed sweet potatoes, cooked lentils, 1/4 cup rolled oats, garlic, lemon juice, olive oil, paprika, cumin, salt and pepper in a food processor (or simply mix together by hand if you don't have one). Pulse until the ingredients are well combined —the mixture will still be somewhat thick.

Transfer to a bowl, add in the other 1/4 cup rolled oats along with the spinach, pipettes, hemp seeds, and cilantro. Stir all the ingredients together until well combined.

Using your hand, form 6 patties and place on the baking sheet.

Bake the patties for 30 minutes total—flipping them at the 15 minute mark.
