Energy Bites



Another quick and healthy snack idea —and it kind of satisfies a sweet tooth ;)

Here's what you'll need:

2 1/4 cup of rolled oats
1 cup natural peanut butter (I used the crunchy kind!!)
1/2 cup honey or other sweetener (e.g., agave nectar, maple syrup)
3 Tbsp chia seeds
3 Tbsp pepita seeds
6 Tbsp chocolate chips
1/2 tsp cinnamon

Other add ins: any type of crushed nuts or dried fruits (e.g., pecans, walnuts, raisins, cranberries), coconut flakes

In a large bowl, mix together all of the ingredients until they are well combined (I always use my hands to do this). The mixture should be "gooey", but it should be sticky enough to form balls. You can add more wet or dry ingredients until you get the right texture. Also, have fun experimenting with different sweeteners, nut butters, and add-ins. The combinations are truly endless!

Cover the bowl and refrigerate for 30-60 minutes, then use your hands to form balls.

You should store the energy bites in an airtight container in the refrigerator. They stay good for about a week or so. You can also freeze them for 4 weeks and take them out as necessary.
